Pumpkin Soup

Ingredients

    Directions

    Step1

    Cut, remove seeds and skin of pumpkin

    Step2

    Chop into chunks and coat in olive oil

    Step3

    Place in a moderate-high oven to roast for 30 minutes

    Step4

    Place a little oil in the pot and cook onion and garlic until clear

    Step5

    Add 1 litre of vegetable stock

    Step6

    When pumpkin is tender and becomes golden remove from the oven and place into the liquid

    Step7

    Cook for 5 minutes and blend with stick blender until smooth

    Step8

    Season with salt and black pepper to desired taste.
