A word from our Community Garden Australia’s Ambassador, Costa Georgiadis about the ‘Flavours of Launceston’ recipe project, July 2023

Cookbooks are so much more than just a tabulated list of ingredients. They are a heartfelt expression of not just the people that create the dishes but also those who grow the ingredients that inspire the dishes that ooze and splash and flake and pour their way out of the pages of this book.

Flavours of Launceston is a true community collaboration featuring ingredients that are grown and have been nurtured in 11 community gardens across Launceston. Freshly growing vegetables have gone from their content home in gardens to starring roles in pancakes, soups and curries. Warrigal greens are giving frittatas a whole new signature while salsas, relishes and patties are now the loud-hailers of long-time family heirloom dishes for all to have a crack at.

Like the community gardens and the gardeners who tend them, this cookbook is filled with stories and history that are deeply infused in the flavours of each recipe. The best way to release the flavours and let the stories live and breathe again and again is to flick the book open regularly and make friends with a new dish. You won’t be disappointed.
