    Step1

    Place radishes in the sun for half a day if sunny, and a full day if cloudy to reduce water

    Step2

    Put radishes in a large bowl and mix all ingredients with half the oil and mix with your hands, rubbing spices into a radish

    Step3

    Place radish pieces into a jar and pack them in so there is no air in between pieces

    Step4

    When full place oil on top and seal the lid

    Step5

    Leave the jar out in the sun for 1 to 2 weeks to ferment, the stronger you like the flavour the longer you leave it in the sun

    Step6

    Store in the cupboard, don’t refrigerate.
