Ingredients

  • 700g beef flank steak
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tbsp butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley, chopped

Method

  1. Pat the beef flank dry and place it in a shallow dish.
  2. Mix olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Rub the mixture over the steak and marinate for 30 minutes.
  3. Heat a heavy pan or barbecue over high heat.
  4. Cook the steak for about 3–5 minutes per side, depending on thickness and preferred doneness.
  5. Add butter during the final minute and baste the steak.
  6. Remove from the heat and rest for 5–10 minutes.
  7. Slice thinly across the grain and garnish with fresh parsley.
  8. Serve immediately with your favourite sides.
