When our community was asked ‘What does gastronomy mean to you?’ the response that resonated most came from Kathryn Kahl of Launceston, our UNESCO Creative City of Gastronomy. ‘Everyone having a seat at the table to share a good meal, recipes and stories.’ This description underlines the essence of who we are as a community surrounded by the rich agricultural region of the kanamaluka / Tamar River in Northern Tasmania.
Ours is an ancient land shaped by ice and fire, primeval geological shifts, and many millennia of husbandry by the palawa people. From the industry of local growers and producers to the restorative practices found in our neighbourhood gardens and farmlands, we are grateful for the sustenance provided by the rich soils, waterways and temperate climate of our island home.
Food brings us together. Our community gardeners are found across the city and region and include many new residents from other parts of the world who now call this place home. They bring new ways and knowledge for us to grow our skills and gastronomic offerings. From the food that is grown with love and generosity, tasty dishes are created. This is our community table which has enough seats for everyone to share good meals, recipes and stories.
Within this book are some of those recipes for you to make and enjoy with others. We congratulate all involved in this beautiful, useful and generous publication. Thank you.
