Chocolate Zucchini Loaf

    Step1

    Preheat the oven to 180 degrees C — cream butter, honey and rind in a small bowl

    Step2

    Add eggs one at a time and beat well

    Step3

    Transfer to a large bowl, stir in sifted ingredients, flour, cocoa and cinnamon, then stir in milk, zucchini and walnuts

    Step4

    Spread into a 15cm x 25 cm loaf pan lined with baking paper

    Step5

    Bake for 45 minutes. Stand for 3 minutes before removing from tin

    Step6

    Sprinkle with caster sugar.
