Dig a hole in the ground about 1m round - put the soil to the side — then build a wood fire in the hole, then add stones on top
Once the fire dies down and the stones are hot, place wet hessian bags over the stones, then place food in aluminium foil over the hessian bags then place wire to hold it in place

Add the soil, that was stockpiled, over the wet hessian bags as an insulation layer to keep the smoke and heat in
After around 2 1/2 hours, depending on the weather, remove soil and stockpile to use to fill in the hole (in Fiji it only takes about 1 hour to be ready)
Remove the hessian bags
Remove wire to reveal the aluminium foiled covered food, then remove food from the fire, remove stones, then backfile stockpiled soil
Serve.
