Directions
Place the wine, sugar and cinnamon stick in a saucepan large enough to hold the pears, add 1 cup water, and then bring mixture to boil. Stir until sugar has dissolved.
Peel the pears, leaving the stalks attached. Add to the saucepan, top up with water (if needed) to cover the pears. Bring to boil again, then reduce heat and simmer gently for at least 30 minutes until pears are tender (this could take up to an hour).
Transfer pears to a bowl or dish. Boil cooking liquid until it has reduced, then pour over pears. Serve hot or cold, with cream or ice-cream.
