Directions
Heat oil in a large saucepan and gently fry the onion and garlic (if using). When soft, add the cumin and stir through.
Add the pumpkin, celery and potato to the pan, and pour in enough stock (or water plus crumbled stock cube) to almost cover the vegetables. Bring to the boil and simmer for 20 minutes, or until vegetables are soft.
Puree contents of the saucepan in a blender (or mash with a potato masher), and add salt and pepper to taste. Return to saucepan, reheat and then serve.
