    Step1

    Soak beans overnight, drain and wash and cook until soft, then combine the beans, capsicum and carrots and cook until the beans soften

    Step2

    Heat oil in a pan and fry onion and garlic until soft

    Step3

    Add herbs and fry until fragrant, add passata sauce

    Step4

    Place corn chips in an oven-proof dish and add sauce, stir to coat the chips

    Step5

    Sprinkle cheese throughout the chips, place in a moderate oven and melt the cheese

    Step6

    Remove from oven and add salad, guacamole, hummus and raita and serve warm.
